I love meal prepping on Sunday. It makes my entire week feel more put together. It keeps me from scrambling to find something to take for lunch at 7am, or resorting to heavy fast food options or an expensive take-out meal.
Today, I simply want to share one of the meals I make on the regular for my workweek lunches!
Ground turkey sausage and roasted veggies topped with goat cheese.
Quick, easy, simple, and healthy.
First, I chop a variety of veggies into bite size pieces. This time, I chose broccoli, yellow squash, and tri-colored carrots. Having a lot of color in your meal not only means a variety of nutrients, but it is also visually satisfying. We eat with our eyes first!
I toss the veggies in coconut or olive oil, sprinkle them with any herbs and spices I have on hand, this one was a McCormick veggie blend, and roast them in the oven at 350 until they are tender and slightly browned on the edges. I like for them to have a little charred taste. I also usually forget about them while I prep everything else. If you are a timer type of person, I recommend checking your veggies around 30 minutes.
For the Turkey sausage, I start with ground turkey breast. While it is browning in a pan, I add my spices.
1t parsley
1t Italian seasoning
1t black pepper
1/2t fennel
1/2t paprika
1t garlic powder
1t onion powder
I found this mixture on google and adapted it out of laziness and lack of ingredients. Really, I just wing it. I love garlic, and the fennel is where that sausage flavor comes from. Everything else is just extra.
Once the turkey is no longer pink and the veggies have reached the desired level of roastiness, I divide them into my Chinese food containers and top them with a medallion of goat cheese. When I heat them at work, the goat cheese melts and I mix it all together. It is delicious, filling, and satisfying.
All together, between cooking my lunches and pre-portioning out some fruits for my snacks, I spend about an hour every Sunday meal prepping. Eating healthy does not have have to be complicated or fancy. It just has to be something you are willing to put a little time and effort into.
